Curry-Coconut Shrimp

1/2 cup minced pink bell pepper
1 clove garlic, minced
1 teaspoon ground cumin
three/four teaspoon ground coriander
half teaspoon curry powder
half cup mild coconut milk
1 teaspoon sugar
1/4 teaspoon crushed pink pepper flakes
1 pound jumbo shrimp, peeled and deveined
1 tablespoon cornstarch
1 tablespoon water
2 tablespoons chopped clean cilantro

Instructions :

Heat oil in big, nonstick saucepan over medium heat. Saute onion, pink pepper, and garlic till vegetables start to soften, approximately three mins.
