Classic Tiramisu

  • Combine egg yolks and sugar inside the top of a double boiler, over boiling water. Reduce warmth to low, and cook dinner for about 10 minutes, stirring continuously. Remove from warmth and whip yolks till thick and lemon coloured.
  • Add mascarpone to whipped yolks. Beat till blended. In a separate bowl, whip cream to stiff peaks. Gently fold into yolk aggregate and set aside.
