Bangan ka Bhurta (Indian Eggplant)

  • 1/four teaspoon pepper
  • 4 sprigs chopped fresh cilantro

Instructions :

Prep : 15M Cook : 4M Ready in : 35M
  • Preheat the oven broiler. Place eggplant in a roasting pan, and broil 5 mins, turning once in a while, until approximately half the skin is scorched.
  • Place eggplant in microwave secure dish. Cook five minutes on High within the microwave, or till tender. Cool sufficient to handle, and take away skin, leaving some scorched bits. Cut into thick slices.
  • Heat oil in a skillet over medium warmth, stir in the onion, and cook dinner until soft. Mix in eggplant, and tomatoes. Season with cayenne pepper, salt, and black pepper. Continue to prepare dinner and stir till smooth. Garnish with cilantro to serve.
