Spinach and Sun-Dried Tomato Pasta

Ingredients :

1 cup vegetable broth
12 dehydrated solar-dried tomatoes
1 (eight ounce) package deal raw penne pasta
2 tablespoons pine nuts
1 tablespoon olive oil

1 clove garlic, minced
1 bunch clean spinach, rinsed and torn into chunk-length portions

Place the pine nuts in a skillet over medium warmth. Cook and stir until gently toasted.
Heat the olive oil and crimson pepper flakes in a skillet over medium warmth, and saute the garlic 1 minute, till soft. Mix in the spinach, and cook till nearly wilted. Pour in the reserved broth, and stir within the chopped solar-dried tomatoes. Continue cooking 2 mins, or until heated through.
In a massive bowl, toss the cooked pasta with the spinach and tomato combination and pine nuts. Serve with Parmesan cheese.
